CSA Box #1

Yippee! Our first CSA box came today! For the spring/summer season we are splitting each week's box with another family. So this picture shows HALF of the contents of the box. We chose to split the box with some friends who are a family of three. This season is 20 weeks long, so it is best we aren't getting too much or else we (I mean I... the food preparer) may feel overwhelmed. During the fall subscription last year (8 weeks) there was SO MUCH food (kale and collard greens coming out my ears!). This picture is for you, Dad!

Clockwise from upper left: kale, spinach, rhubarb, radishes, romaine lettuce, green onions, mint and mushrooms (all locally and organically grown!)

Hey! Cori and Luis are doing this same thing! There's some creativity involved with cooking with vegetables you're not really familiar with, right? ;-)

Neat idea... but do you wind up throwing overages away becuase you can't wind up preparing everything in time before they go bad?

I try to plan my menu when I know what will be in the box. We did end up throwing half the radishes out (not a big fan of those... Randy is the only one who likes them), but the rest was chopped and frozen or eaten!
